La feria de Jerez is the jewel in the crown of all the ferias in Spain!  It is also known as the Feria del Caballo and it is celebrated every year in May. The feria has hundreds of casetas where exquisite wines, oloroso and fino, and tapas from the area are served. It would not be a feria without lots of flamenco dancing and people wearing their traditional flamenco attire. And yes, we are planning a trip from 3rd-7th May (dates to be confirmed).
